there's always the book, "Linux Game Programming". I haven't read it myself but I've been told that it's a pretty decent.
i can recommend the website www.opengl.org as well, assuming you're interested in the graphics part. the site has lots of useful examples and with the knowledge you learn there you can make some pretty cool games.
i'd also recommend looking for some open source games, and reviewing the source codes. how better to see how a game works than to look under the hood.

Decided I would dig up an old post.
I know the guy who wrote that book (Through IRC) I have not read it yet either, but from what I hear it is very good (Althought there are a few errors, and his site points them out.

if you want to write 3d game engines, you better also pick up a copy of The Holy Bible, 'cause you'll need to find religion.
...you may also want to get your M.S. in mathematics.

After you read that bible you can read "DirectX 3D Graphics Programming Bible", it's a pretty good book for directx.
It's only directx7 but it teaches you the basics of 3d-graphics..
